Due to the characteristics of North Korean cuisine, they focus on fresh and high-quality ingredients rather than strong seasonings to create a mild and clean taste. Important ingredients like dongchimi and fermented sauces are aged for over one year, providing a deep flavor distinct from recent North Korean food franchises, attracting long-time customers including defectors and their families as well as gourmets seeking unique flavors.
